Ingredients
- 4 large Yukon gold potatoes, cut into 2–3 pieces each
- ¼ cup olive oil, divided
- 3 frozen garlic cubes, thawed
- 1 heaping Tablespoon za'atar
- ¼ tsp onion powder
- 1 tsp honey
- Kosher salt and black pepper, to taste
Creamy Dip
- ½ cup mayonnaise
- 1 Tbsp oil
- 1 tsp pickle brine
- 1 tsp sugar
- ¼ tsp parsley flakes
Directions
- Preheat the oven to 350°F.
- Place the potatoes in a pot and cover with salted water. Bring to a boil and cook for 25 minutes, until fork-tender.
- Drain the potatoes and allow any excess moisture to evaporate.
- Line a real sheet pan with baking paper and spread 2 Tbsp olive oil evenly over it.
- Arrange the potatoes on the prepared pan, leaving space between each piece. Using the bottom of a cup, gently smash each potato to approximately ½-inch thick.
- In a small bowl, mix the remaining 2 Tbsp olive oil with the thawed garlic, za'atar, onion powder, honey, salt, and black pepper until well combined.
- Spoon the garlic-za'atar mixture evenly over the smashed potatoes.
- Bake uncovered for approximately 1 hour, until golden and lightly crisp on the outside while remaining soft and fluffy inside. No flipping necessary.
- Meanwhile, combine all the dip ingredients in a small bowl and refrigerate until ready to serve.
- Serve the potatoes hot with the chilled creamy dip on the side.
